2 Cans of undrained Cannellini, Navy or White beans
3 Boneless/Skinless Chicken Breasts, cubed
1 10 oz. Can Rotel Diced Tomatoes with Green Chillies
2 Cups of Chicken Stock
2 Garlic Cloves
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander seed
1/4 teaspoon ground cumin
1 Medium Onion, diced
Put everything in your slow cooker and cook on low for 8 hours or high for 4 hours. Top with cheese, sour cream, onion, chips, etc.
((If it's too spicy, add an 8 oz. block of cream cheese ))
