Slow Cooker "Red Beans & Rice"




*You need at least a 7 quart Crockpot for this recipe

1 lb. of Red Kidney beans, soaked overnight, drained
5 Cups of Chicken Stock
2 Stalks of Celery, diced
3 Bay leaves
1 Green Bell Pepper, diced
1 Medium Onion, diced
2 Cloves of Garlic
8 oz. Andouille Sausage, half-mooned
2 tsp. Cajun Seasoning (optional)

In your crockpot, add the drained beans, chicken stock, celery, bay leaves, bell pepper, onion, garlic and sausage.  Cook on low for 7 hours or high for 4.  Serve over white rice.  Super easy and DELICIOUS!
