Sweet & Savory Corn Pudding (Casserole)

Awesome Corn "Pudding"!

INGREDIENTS

  • 1 Cup of Sour Cream
  • 1 Stick of Butter (melted)
  • 2 Eggs
  • 1 Box of Jiffy Corn Muffin Mix
  • 6 Ears of Fresh Corn or 1 (15.25 ounce) can Sweet Whole Kernel Corn
  • 1 (14.75 oz.) can cream-style corn
  • 4 oz. (or more) of Colby Jack Cheese

DIRECTIONS

  • Preheat oven to 350 Degrees F. 
  • Grease/Spray a 2-quart casserole dish.
  • In a large bowl, lightly beat eggs. Add melted butter (cooled), and sour cream. 
  • Stir in corn, creamed corn and 3/4 of the cheese. 
  • Mix well. 
  • Pour mixture into prepared casserole dish.  
  • Top with remaining cheese
  • Bake for 1 hour.
