Cranberry Pecan Chutney (Relish)


Needed:
1 cup Water
1/2 Cup white sugar
1 12 oz. package fresh cranberries
1 Small can of Mandarin Oranges (pureed)
1 Asian Pear, cored and diced*
1/2 Cup Dried Apricots, diced
1/2 Cup Dried Cherries
1 Cup chopped pecans
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

*To subsitute the Asian Pear:1 Apple - peeled, cored and diced
1 Pear - peeled, cored and diced

Prepare all the ingredients before you start.  It's SO much easier, that way you can just dump the ingredients in!

In a medium saucepan, boil water and sugar until the sugar dissolves.

Reduce the heat to simmer, and stir in all remaining ingredients (cranberries, pureed mandarins oranges, Asian pear, dried cherries, pecans, salt, cinnamon, and nutmeg).

Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst.

Remove from heat, and let cool.

Serve warm or cold!
