Garlic Cauliflower Mash

GARLIC CAULIFLOWER MASH
Needed: 
1 Head of Cauliflower
1 Small Potato
1 tsp Fresh Garlic (about 2 cloves)
2 Tbs Sour Cream
1 Tablespoon of Butter
Fresh Chives (optional)

Remove florets from Cauliflower, add those, the garlic and the potato to a pot of salted water.

Boil until the potato is really tender.


STRAIN 
I like to strain it for at LEAST 30 minutes.  
The less moisture, the better.


Add the remaining ingredients (plus some salt and pepper to taste) to your food processor.  Puree until it reaches the texture you'd like.


At this point, you can either heat it back up on the stove, I like to just throw it in the microwave.

I use this to top my Pot Pie Filling instead of a bulky Pie Crust.

SO DELICIOUS!!
