Ricotta Filled Zucchini Boats

Needed:

2 Medium Zucchini
1 3/4 Cups Ricotta (I used low-fat)
1/4 Cup Parmesan Cheese
10 Basil Leaves, finely chopped
2 Tbs Fresh Parsley, chopped 
1 tsp Italian Seasoning
1 tsp Fresh Garlic
Cracked Black Pepper

I actually put all of the ingredients (except the zucchini) into my food processor.  It worked really well!

Cut the zucchini in half and scrape out the insides to make a "boat".  You can keep the insides for something else, or even add it to the Ricotta mixture!

Preheat your oven to 400 degrees.

Fill the "boats" with your cheese mixture and place in a baking dish. (If I had any Mozzarella, I would have topped it with that)



Cover with foil and bake for about 15 minutes.  Remove the foil and continue baking for about 15 minutes or until the zucchini is tender.

Let stand for about 7 minutes, otherwise the cheese will "goo" out.
