Chicken Roulade with Spinach and Mozzarella


Needed:
3 Chicken Breasts
3 SticksMozzarella String Cheese
1 Package of Fresh Baby Spinach
Salt, Pepper and Granulated Garlic (Garlic Powder)
Toothpicks
Pasta Sauce

Step 1:  Butterfly your chicken breasts

Step 2:  Pound out the 6 pieces of chicken to about 1/4 inch thick

Step 3:  Season BOTH sides of the chicken breasts with salt, pepper and garlic

Step 4:  Cut your 3 Cheese Sticks in half so that you have 6 total

Step 5:  Place your Chicken in front of you.  Put about 1/2 Cup of Spinach on the chicken (it shrinks when you cook it), the cheese stick half on top of the spinach (that helps keep the spinach in when you roll it).

Step 6:  Roll it tight and secure with with a toothpick, repeat

Preheat your oven to 400 degrees

Step 7: In a hot pan, lightly saute the chicken breasts, seem side down first and get a nice sear on all sides.  


Step 8:  Place on a baking sheet and continue to cook for 15-20 minutes or until the chicken is completely cooked.

Cover with foil and let it "rest" for about 7 minutes.

Serve with (or without) Marinara!
