Enchilada "Lasagna"


Needed:

1-2 Cups of Salsa
2 Cups of Refried Beans
2 lbs. Ground Beef
2 10 oz. Cans Enchilada Sauce
1 Package Corn Tortillas
1 8 oz. Bag of Shredded "Taco Blend" Cheese

In a pan, brown and drain your ground beef.  Put it back in the pan and add one can of the enchilada sauce to your meat.

Just like when making Lasagna, I sprayed my dish and put Salsa on the bottom, like I would with Marinara.

Cover with ONE LAYER of Corn tortillas.




On top of that layer, add your meat mixture followed by HALF of the cheese.  Cover with another layer of tortillas.



Next, add your beans.



Cover your beans 1/2 of the remaining cheese and cover that with tortillas.

Add the other 10 oz. Can of Enchilada Sauce over the top (add more cheese).  Bake, covered with foil, at 350 degrees for 30 minutes.  Remove the foil and continue cooking for another 10 minutes or until bubbly and delicious!

You can make this with as many layers of your favorite ingredients as you like!
