Herb Crusted Pork Loin Roast


1 2.5-3 Pound Pork Loin Roast

For the crust, use 1 TABLESPOON each dried:

Rosemary
Sea Salt
Garlic Powder
Herb de Provence 
Black and Pink Peppercorns

I took all of these spices and put them in the blender (I don't have a spice grinder) to mix them well and break up the big pieces of Rosemary.

Coat the roast with olive oil.  Using your hands, apply the herb mixture and make a nice thick crust on the outside.

Preheat oven to 450 degrees.


Place on a roasting rack UNCOVERED and cook at 450 degrees for 30 minutes.

Lower the temperature to 350 and continue to cook for an additional 30-45 minutes or until the INTERNAL TEMPERATURE REACHES 155 degrees.  Don't over cook this!

IMPERATIVE:

When you take the roast out, "tent" it with foil and let it REST for at least 10 minutes!  If you skip this step, you'll have a piece of expensive shoe leather...

SO GOOD (and easy!)
