NEEDED:
1 Pound Ground Beef, cooked and drained
1 Can of Refried Beans (I make my own)
1 Cup of Medium or Hot THICK Salsa
1 Package CORN Tortillas
1 8 0z. Package of Mexican Blend Cheese
1-2 LARGE Cans of Enchilada Sauce (I like Ortega)
In a large pan, combine the beef, beans and salsa. You can always use a taco seasoning packet, but when I'm in a hurry, I use salsa that already has the chopped onions/peppers/ tomatoes.
Let them simmer for about 20 minutes and then let cool so that you can handle it later (safely).
To cut down on fat, I just microwave my tortillas (instead of dipping them in hot oil) to soften them. If you use cold ones, they'll break apart.
Fill with some Cheese and Beef mixture and roll GENTLY!
Make sure that when you roll them, place them SEAM SIDE DOWN in your dish. I usually put as many as possible in one dish (they're really popular here)
Put about 1/3 of the cheese on top..
Pour sauce over the cheese, then add more cheese!
Bake in a 350 Degree oven for about 20-30 minutes. DON'T overcook or they will turn to MUSH!
EAT!
Now I know what I have been doing wrong, I have never put sauce and cheese over the top! I will be trying this soon, probably in the fall when it cools down a bit here.
