1/2 lb. Capellini (Angel Hair)
1 lb. Raw Shrimp
1 1/2 Cups Heavy Cream
1/2 Cup butter (or more)
1/2 Cup good White wine (optional, but encouraged)
1/2 tsp Lemon juice
2 Large garlic cloves, minced
1 1/2 Cups Grated Parmesan
Fresh Cracked black Pepper
Cook pasta according to directions in salted water
In a large saucepan, melt butter and add the wine, lemon juice and black pepper. Bring to a very light simmer, add the shrimp and cream. Simmer for about 5 minutes. Add the garlic and simmer for about 2 more minutes or until your shrimp is done. Add the Parmesan and mix thoroughly. Toss in pasta. If the sauce is too thick, add a ladle of the pasta water.
