California Potatoes and Eggs



4-5 Russet potatoes, pealed and cubed
4-5 Slices of Bacon, cooked and crumbled
1 Green Pepper, diced
1 Red Pepper, diced
1 Yellow Pepper, diced
1 Medium Onion, diced
1/2 tsp Garlic Powder
Salt and Pepper
Eggs


In a large pan, saute the peppers, onion and potatoes seasoned with the salt, pepper and garlic powder.

Preheat the oven to 350 degrees.

When the potatoes are just about fork tender, combined the bacon with the mixture and transfer to a baking dish.



Place eggs on top, COVER and bake for about 5-7 minutes or until eggs are done to your likeness.
