This is BY FAR the EASIEST (and probably best) cream sauce I've ever made.
I didn't have to mess with "heavy creams" or making a "rue".. SO EASY!
In a Large pan combine:
1 1/2 Cups Vegetable Stock
1 8 oz. Block of Softened Cream Cheese
3 Tbs Lemon Juice
1 Tbs Dried Dill
THAT'S IT!
Let the ingredients simmer until the cheese has melted down into this nice consistency.
Add more stock if you want it thinner.
Add the Tilapia fillets, cover and cook on LOW for about 7 minutes or until the fish is flaky!
I served this over Rice Pilaf (compliments of Rice-a-Roni).
