My FAVORITE carb/veggie combo is Mashed potatoes and Corn! I tried this like 4 different ways until I got it right!
I found the following leftovers:
Garlic Mashed Potatoes
Herbed Corn
Bacon bits (the real kind for salad)
Seasoned Croutons
For the fritter:
2 Cups of Mashed Potatoes
1 Egg
1 Cup of crushed croutons (or breadcrumbs)
1/2 Cup corn
1 Tablespoon of Bacon Bits
2 Cups of Cheddar Cheese, shredded
Combine ALL ingredients smash into the size you want and deep fry until golden brown! Serve with sour cream! YUM!
