1/2 lb. Orzo, cooked as directed and set aside to cool
1/2 Cup of Onion, diced
1 Garlic Clove, crushed
1 Egg, slightly beaten
1 lb. Shrimp, peeled and deveined
8 Slices of bacon, cooked and broken into pieces
8 oz. Package of Crimini (Baby Bella) Mushrooms
1/4 Cup White Wine
1/4 Cup Parmesan Cheese
After cooking the bacon, remove it and set aside.
In the same pan, saute the onion until almost translucent.
Add the wine, mushrooms and shrimp and cook until opaque.
Add the garlic and cook for about 30 seconds more.
In a separate dish mix the beaten egg into the cooled Orzo.
Add the hot shrimp mixture to the orzo, add cheese and combine well.
Serve HOT!
