Homestyle Chicken Parmesan



4 Boneless Skinless Chicken Breasts
2 Eggs
3 Cups Italian Breadcrumbs
8 oz. Italian 4-Cheese Blend, shredded
1/2 Cup Parmesan Cheese
2-3 Tbs Olive Oil for Frying

I usually pound out my chicken breasts, but I was tired and everyone was hungry :)

Mix breadcrumbs and Parmesan Cheese.  
Set up an "assembly line" of the eggs (slightly beaten) and the breadcrumbs.  Dip each breast in the egg and then coat generously in the breadcrumbs.

Heat Oil in a frying pan.
Preheat Oven to 350 degrees.

Saute Chicken until it's browned on both sides.  

If I had pounded out my chicken, I wouldn't have used the next step (baking them), but I didn't want to risk having undercooked chicken.  This actually worked perfectly!


Transfer chicken to a baking sheet, top with shredded cheese, and bake for 20 minutes at 350 degrees.


I made some Linguini with this.  
Serve warm with extra sauce!
