Easy Sweet & Sour Chicken



This is a super easy recipe.  
You can see in the picture that there are pepper "spots" in there.  My husband really likes spicy food, so I added some red and black pepper to it.

I used both chicken breasts and thighs, cubed.
For this amount of sauce, use 3-4 pieces of chicken, cubed.

I used a simple TEMPURA batter.  It's really light.

BATTER:
1 Egg
1 Cup of ICE COLD water
1 Cup of SIFTED All Purpose Flour

Beat an egg in a bowl.

Add ice water to the bowl.
USE REALLY COLD WATER 
(I put mine in the freezer for about 10 minutes)

Add flour into the bowl and mix LIGHTLY.
Don't mix it too much!

SAUCE:
2 Tbs White or Rice Vinegar 
(Rice vinegar gives better results)
4 Tbs Brown Sugar
2 Tbs Ketchup
1 Tbs Soy Sauce
2 tsp of Cornstarch mixed with 4 tsp cold water (thickener) 

Mix all ingredients except for the cornstarch and water in a saucepan and bring to a boil.

In a separate bowl, mix the cornstarch and water and add it to the saucepan.  This will thicken the sauce.

I made a "double batch" of this because I made a lot of chicken.  It was SO GOOD!!
