I made a huge dish of this, but you can cut it in half if you'd like.
2 lbs. Ground beef, cooked and drained
1 Medium Onion, diced
2 Cups of Cut baby Carrots
5-6 Medium Potatoes, peeled and sliced
1 Can of Cream of Mushroom Soup
1 Jar of Beef Au Jus Gravy (Heinz)
1 Can of Corn, drained
1 Can of Green beans, drained
1 Cup of Cheddar Cheese
After you've cooked and drained your hamburger, mix in the remaining ingredients except for the potatoes and cheese.
Preheat oven to 325 degrees.
Put mixture in a large casserole dish that has been sprayed with Pam and cover with cheese. Top with potato slices and season with salt and pepper. SPRAY THE TOP OF THE POTATOES WITH PAM.
Cover and cook for 2 hours at 325. Remove foil, increase heat to 450 and cook for 20 minutes to crisp the potatoes.
I did this ahead of time, that's why I cooked it so slow. You could do 350 for an hour. Just make sure the potatoes are fork-tender.
THIS WAS SO GOOD!!! Perfect for cold weather!
