SLOW COOKER Beef Tips With Mushrooms





1-3 lb Chuck Roast, cubed

1 Medium Onion

1 tsp minced garlic

1 Cup (good) white wine

1/2 tsp Cornstarch

2 Tbs Olive Oil

1 Cup of Beef Stock

1 8 oz. Package of Button or baby Bella mushrooms

Salt and pepper

In a saute pan, heat olive oil and add beef cubes.  Season with salt and pepper and sear on all sides.  Remove the beef and add it to your crock pot.

In the same pan (without draining the oil), add the onion and saute till translucent, in the last 30 seconds of cooking, add the garlic.  Do NOT burn the garlic, it's horrible. Add that to your crock pot.

Add the wine to the pan, heat to simmer and reduce the wine to half and add the stock and cornstarch.  Stir well and add to the beef and onions.

Cook on HIGH for about 2-3 hours and add the mushrooms during the last 30 minutes.  Eat over noodles or rice!
