(I call them this because my 4 year old tried to say "Chocolate Chip with Walnuts" and it came out like that!)
Ingredients:
4 1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages of instant vanilla pudding mix
4 eggs
2 Tbs vanilla extract (yep, I know)
4 cups semisweet chocolate chips
2 cups chopped walnuts
Preheat oven to 350 degrees F.
Sift together the flour and baking soda,baking powder and salt set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the (dry) instant pudding mix until blended. Stir in the eggs and vanilla.
[You’re supposed to do the next two steps as written, but I do it backwards. I add the chips and nuts to the wet mixture first because if I add the flour first, it’s too hard for me to stir everything in. This way, I know that everything is mixed thoroughly]
Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.
I made 4 dozen out of this batch and ended up freezing almost half of the dough! If you need a lot of cookies, this is your recipe! I plan on giving the frozen dough to my mom with cooking instructions.. It’s always nice not to have to do all the work, but get hot cookies!
