1 lb. fresh broccoli florets, steamed for 2 minutes
3 Cups cooked chicken breasts, cubed
3 Cups cooked ham, cubed
2 Cups Grated Cheddar Cheese
2 Sleeves Ritz Crackers, crushed
1 Stick melted butter
SAUCE:
¼ cups Cornstarch, dissolved in ½ cup COLD Water
⅓ Cup melted Butter
1 Cup Chicken Broth
¼ tsp. Salt
¼ tsp Pepper
2 Cups Milk
2 Cups Grated Cheddar
Combine the chicken, ham and broccoli and place in a greased 9x13 baking dish. Set aside.
Preheat oven to 350 degrees
In saucepan over medium heat, combine the cornstarch that has been dissolved in water, ⅓ Cup butter, 1 Cup chicken broth, salt, pepper and milk. Stir well, and continue stirring until sauce has thickened.
Turn heat down to low, and add 2 cups grated cheddar cheese. Stir until melted. Turn off.
Pour sauce over the chicken, ham and broccoli.
Top with 2 cups grated cheddar cheese.
Crush Ritz crackers in large zip-lock bag with a rolling pin. Pour 1 stick of melted butter into zip-lock bag and shake to coat evenly. Sprinkle crumbs over the top of the grated cheese.
Bake uncovered at 350 degrees for about 30 minutes, or until hot & bubbly.
