1 19 oz. Package of fresh Cheese Tortellini
4 Cups Chicken Stock
1 14.5 oz. Can of diced Fire Roasted tomatoes, drained
1 8 oz. Package Crimini Mushrooms
1/2 Cup dry White Wine (I used Chardonnay)
1 8 oz. Package of Cream Cheese
1 teaspoon dried Oregano
4 Cloves of Garlic (I know..)
1 10 oz. bag of Fresh Baby Spinach
1/8 teaspoon fresh cracked black pepper
I started this in my crock pot but moved it to the stove because it wasn't reducing fast enough...
Combine the chicken stock, white wine, Oregano, garlic, tomatoes, pepper and cream cheese in a saucepan and cook on medium heat. Continue reducing until the sauce thickens, about 2 hours. DO NOT BOIL.
About 20 minutes before you serve, add the mushrooms. 10 minutes before, add the tortellini and spinach. Toss to combine. Mangiare e divertirsi (Eat and enjoy)!
