1/2 cup chopped onion
2 tablespoons butter
1 tablespoon flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups half-and-half
1 1/2 cups shredded Cheddar cheese
6 potatoes
1/2 cup shredded Cheddar cheese (for topping)
Slice potatoes, and arrange in an ungreased baking dish.
Melt butter in saucepan, add onion and cook until onion is tender.
Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat.
Stir in half-and-half and cheese. Heat until bubbly, stirring constantly. Cook and stir about 1 minute until thickened.
Pour cheese sauce over potatoes. Bake uncovered at 350 for 75 minutes, until potatoes are tender and top is brown and bubbly.
Sprinkle with remaining cheese. Return to oven for about 4 minutes until top is lightly browned.
