6 Boneless Skinless Chicken Breasts
6 Slices of Smoked Ham
6 Slices of Lace Swiss Cheese
1 Cup of Italian Breadcrumbs
(toothpicks)
Pound chicken breasts if they are too thick (around a 1/4 inch thick is perfect).
Place a slice on ham and cheese on each breast within 1/2 inch of the edges.
Fold the edges of the chicken over the filling, and secure with toothpicks.
Roll in Italian Breadcrumbs.
I use Italian just to add more flavor.
Heat Olive Oil and sear SEAM SIDE DOWN at first to make sure that they don't unroll. Follow by searing on all sides.
Place on a baking sheet and bake, uncovered, at 350 for about 30 minutes (depending on how thick the chicken is) or until chicken is no longer pink and juices run clear.
Let it rest for at least 10 minutes before serving.
